The key to having the perfect olive production in all its cultivars is in the production. The "Greek method" is the closest you can get to a natural result without any waste produced in the process. The method is based on the use of natural brine, where the olives ferment for months. This method also produces Organic Green Olives.
Not only it benefits the taste of the olives but also manages to keep all of their nutritional values such as the Maclinic acid*. It is one of the triterpenic acids of the table olives, a substance that according to mainly Spanish researches, selectively fights colon-cancer. In any other methods of processing, these values would be lost since the product would have to be washed from the chemicals used to take the bitterness out of the olive.

Olives

Grown in one of the most attractive European regions, they are distinguished for their size and taste. Every year for our production - which is the best quality the region has to offer - we ensure optimal conditions for a natural fermentation in brine. Continuous supervisions are followed by random chemical analyses to ensure the health benefits and organoleptic properties of our production. You will see our full range starting from whole, pitted, stuffed, sliced and last but not least our delicious cracked olives with a mild, buttery and slightly tart flavor. Their flesh is cracked after harvest which allows quick penetration and infusion of the marinade into the olive's core.

Kalamata olives are only found in the Peloponnese peninsula in Southern Greece and have played part in the human diet for thousands of years. Their growth is favoured by an ideal climate giving them much larger leaves than other types of olive trees around the nation and the world. They contain a range of health-promoting vitamins and minerals. Particularly high in iron and vitamin A, it is said that regular consumption may help lower the risk of cardiovascular disease and various cancers. They are produced using traditional lactic acid fermentation and preserved in red wine vinegar and olive oil for a distinctive rich, smokey and fruity flavor. No colouring is added during the process.This is one of the main reasons why they are distinguished from foreign counterparts since no artificial coloring is used. In our range of whole, pitted, sliced and halves you will be able to choose from the two different cultivars the country has to offer, black Kalamata and blonde Kalamata olives.

This extremely fleshy variety with a ratio of flesh to core 10-1 is plucked from their branches when very ripe. It has the distinct characteristic of having a range of colors from leafy green to midnight black and every possible hue in between depending on the time of harvesting. They can be cured in a variety of ways always giving a mild fruity flavor.

Varieties of oxidized olives either in emerald or red are available upon request. They are mainly from varieties in Halkidiki so that they can be distinguished due to their size and taste.

Harvested early as the name suggests around the second half of September helps them preserve their useful nutritional properties. They turn black through an oxidation process. Although slightly neutral in flavor and aroma they are popular due to the low salt preservation. Additionally we have a whole dried "wrinkled'' variety from black olives. They are produced mainly in Halkidiki, Northern Greece. They are collected pretty mature in order to lose their bitterness which gives them a unique taste, the wrinkled texture comes after being put in layers of dry salt. They are very rich in oil content.
